It turns out the UK aren’t the only ones obsessed with BBQ’s when the summer blesses us with its presence. As you venture into Asia, specifically Pakistan, you start to realise the wealth of dishes available to create a perfect BBQ.
After all, most traditional Pakistani foods are cooked over red-hot coals anyway. Chicken tikka is a dish that is known as well outside of Pakistan as it is inside it. Quartered chicken is skewered and scored, smothered in a marinade of chillies and spices – giving the meat it’s characteristically red colour – before being chargrilled to perfection. This can easily be done on your BBQ this summer; not only is it an easy dish to make, but it will make a refreshing change from the usual fare your guests will be expecting.

This simple dish will make a great appetiser for your guests and is an absolute favourite in Punjabi BBQ. Paneer cubes are the perfect base to build incredible flavour; marinating it in a spicy mix before grilling transforms the paneer into a great dish that both meat and vegetarians will love.
If your guests are looking for something a little spicier, this classic dish of tender chicken thigh pieces marinated in spices and herbs and lots of chilli and chilli paste will get them sweating. You can adjust the amount of heat to your individual taste by simply altering the amount of chilli and chilli paste before grilling over the hot coals.
Sizzling, marinated chops can be the show-stealing dish at any BBQ. The marinade is given its richness thanks to fresh yoghurt and cream as well as herbs and spices. When they are cooked over searing hot coals, they continue to sing after you’ve taken them off the heat. They may be small in stature, but they are big in flavour.
