When we hear about people getting banned from an All-You-Can-Eat buffet for eating too much we all ask ourselves – How?
Most of us eat more than we should at a buffet; after all, with so much great food available it is hard not to give into our gluttonous side. But AYCE buffets have a number of tricks up their sleeves to make sure that they are still making money off people who can eat a lot.
The All You Can Eat Metric
The AYCE restaurant’s M.O is to fill the customers belly as cheaply and as quickly as possible. They also need to make sure customers come back for repeat visits to their restaurants and to do this they need to create the perception of providing ample variety of high quality foods. But they need to do this whilst also manipulating customers choices and portion sizes and ensuring food waste is kept to a minimum.
So How do they do it?
Menu Design
Successful restaurants keep their food and beverage costs at about 30% of its revenue. This is easy for AYCE buffets as their menu can easily change to accommodate what is cheap and available – something that fixed menu restaurants can’t do.
Cheap Veg and Meat
AYCE buffet menus are built around cheap ingredients. When buying vegetables and cheap cuts of meat in bulk they are surprisingly cheap. These ingredients can be turned into a number of different dishes which are not only tasty but are extremely filling.
Seasonal
As AYCE restaurants can easily change their menu they can purchase the seasonal ingredients in bulk which makes them cheaper. This makes it seem to the customers as though the food is high-quality without the corresponding expense.
If a restaurant is described as an All-You-Can-Eat buffet, they will most definitely administer these techniques to ensure they are making money. Instead, opt for a banquet styled restaurant, the food quality will be much better and the banquet style of eating requires no tricks, just great food.
