Rista

Originating from Kashmir, rista is a spicy dish made from red meat like lamb and cooked in a tomato-based gravy. It gets its mouth-watering heat from the array of spices that are allowed to permeate through the meat and is known for being incredibly aromatic. In fact, a traditional rista utilises 3 black cardamom, 4 green cardamom, 4 tablespoons of saffron, ½ tablespoon of turmeric, 4 tablespoons of ghee and 6 tablespoons of chilli powder!

Laal Maas

This Rajasthani speciality translates to ‘Red Meat’ and gets its heat from the implementation of red Mathania chilli’s that are native to the Indian region. After all, Laal Maas is a popular Rajasthani curry that has two distinctive features: its use of a native mustard oil and a remarkable smoky flavour profile. It is usually prepared with mutton as the signature meat, and was traditionally eaten by Rajput warriors.

Vindaloo

Although the etymology of the word Vindaloo suggests that it has a Portuguese origin, this well-known curry comes from Goa in Maharashtra. It is traditionally made using spicy chilli peppers, garlic and a variety of spices like paprika, ginger, coriander, turmeric, mustard powder, cumin and cinnamon. Known for its mouth-numbing attribute, vindaloo is a spicy Indian curry that diners should brace themselves for ahead of time.
