As AYCE restaurants can easily change their menu they can purchase the seasonal ingredients in bulk which makes them cheaper. This makes it seem to the customers as though the food is high-quality without the corresponding expense.
If a restaurant is described as an All-You-Can-Eat buffet, they will most definitely administer these techniques to ensure they are making money. Instead, opt for a banquet styled restaurant, the food quality will be much better and the banquet style of eating requires no tricks, just great food.
